Royal Boucherie, the three bell, award winning restaurant by Chef Nicholas Elmi, is hiring a new Chef de Cuisine this summer. Known for our award winning charcuterie program and raw bar, we are located in the heart of Old City, Philadelphia. A canidate should have experience running a kitchen in a sous/cdc/chef capacity which means menu development, costing, scheduling, inventory and anything involved in running the day to day operations of a restaurant. A culinary degree is preferred but not a requisite. Charcuterie knowledge is a must. Terrines, whole muscles, farce, ect. We're looking forward to meeting our new culinary leader!
